More fun with peaches!
Jul. 22nd, 2014 07:40 pmTonight for supper, I made chicken leg quarters with a peach sauce I made up.
Peachy Chicken
4 chicken leg quarters
1 TBSP melted butter
Salt and pepper
3 large peaches, peeled, pitted and diced
2 TBSP honey
1 TBSP soy sauce
Juice and zest of one lemon
1 large or 2 smaller cloves garlic, minced
Put the chicken in a foil lined pan; brush with the melted butter and season with salt and pepper to taste. Place in the oven on broil for about 5 minutes to add a nice golden color.
Meanwhile, combine all the remaining ingredients in a small saucepan and heat to a simmer. Take the chicken out of the oven and reduce the heat to 350F. Spoon the peach sauce over the chicken; cover with foil, and return to the oven for about 40 to 45 minutes.
It was really, really yummy! We've already given away a lot of the peaches, but we still have a lot left. I will be looking for other things to do with them.
