Tonight for supper, I made chicken leg quarters with a peach sauce I made up.

Peachy Chicken

4 chicken leg quarters
1 TBSP melted butter
Salt and pepper
3 large peaches, peeled, pitted and diced
2 TBSP honey
1 TBSP soy sauce
Juice and zest of one lemon
1 large or 2 smaller cloves garlic, minced

Put the chicken in a foil lined pan; brush with the melted butter and season with salt and pepper to taste. Place in the oven on broil for about 5 minutes to add a nice golden color.

Meanwhile, combine all the remaining ingredients in a small saucepan and heat to a simmer. Take the chicken out of the oven and reduce the heat to 350F. Spoon the peach sauce over the chicken; cover with foil, and return to the oven for about 40 to 45 minutes.

It was really, really yummy! We've already given away a lot of the peaches, but we still have a lot left. I will be looking for other things to do with them.

That sauce sounds super yummy and a bit piquant. Sweet, salty and sour.

Peaches in halves alre also delicious for barbeque, particularly with chicken. The halves are glazed a bit with honey while on the barbecue.

I usually just cut them in halves or quarters and freeze them spread on a tray, and when frozen put them into a container, for use in smoothies and shakes, or for cooking later (though so far I have only done compotes with the frozen fruit, nothing else, as it is losing it's structural integrity). For use I take some frozen fruit out, usually combined with rasperries, blackberries, red or black currants, pour (soy)0 milk over it and either blend it right away or let it thaw over night in the fridge before blending. It tastes terrific, I only need very little sweetener if at all, depending on the fruit, and this often replaces my breakfast or lunch. I also use the chunks/berries whole in plain joghurt or my muesli.

(I wish I knew something I could try the sauce with, as it sounds extremely yummy, but I have no idea so far. ;) )
