I came up with this the other day. It's a combination of several recipes I came across.

Watermelon Lemonade

8 cups of watermelon pulp
Juice of 2 large lemons
1/2 c. sugar (or the equivalent in your preferred sweetener)
Water
Ice

1. Put the pulp in a blender and blend on high until it is slushy. Pour the pulp through a fine mesh strainer; you should have about 6 cups of watermelon juice.
2. Pour the watermelon juice and the lemon juice into a 2 quart pitcher.
3. If using sugar, make a simple syrup of the sugar and an equal amount of water, heated until the sugar dissolves. Otherwise use your sweetener as directed. Add to the pitcher.
4. Add more water and some ice until the pitcher is full. Serve icy cold.

This was SO good! Nearly all the other recipes called for the simple syrup and a larger amount of sugar than I specified. I think that would have been way too sweet. But I decided to use Truvia instead.

I've been on a watermelon kick this summer, devouring more of it this year than I have in a long time!

Tonight for supper, I made chicken leg quarters with a peach sauce I made up.

Peachy Chicken

4 chicken leg quarters
1 TBSP melted butter
Salt and pepper
3 large peaches, peeled, pitted and diced
2 TBSP honey
1 TBSP soy sauce
Juice and zest of one lemon
1 large or 2 smaller cloves garlic, minced

Put the chicken in a foil lined pan; brush with the melted butter and season with salt and pepper to taste. Place in the oven on broil for about 5 minutes to add a nice golden color.

Meanwhile, combine all the remaining ingredients in a small saucepan and heat to a simmer. Take the chicken out of the oven and reduce the heat to 350F. Spoon the peach sauce over the chicken; cover with foil, and return to the oven for about 40 to 45 minutes.

It was really, really yummy! We've already given away a lot of the peaches, but we still have a lot left. I will be looking for other things to do with them.

It's been a while since I've made an actual personal post for no special reason. I've been working more days lately, since one of my co-workers recently retired and another quit to stay home and take care of her grandchildren so her daughter can work.

I was scheduled to work this past Sat. until 2PM, but the store was over hours, so they sent me home early, just after noon. So the DH and I decided to drive to Porter, a small town south of Tulsa, for their annual Peach Festival. It was a lot of fun, very busy even though it was late on the last day. We came home with a peck and a half of really NICE peaches, some local honey, a jar of peach butter, and a couple of locally made cheeses. I picked out a farmer's cheese, and the DH opted for a green onion cheese. Oh golly, they are good!

Sunday I was mostly off--I did have to go in to a mandatory safety meeting at work at 7:15AM, at which we watched a video on slips and falls. We were finished by 7:35AM. Came home and did some laundry before heading off to church. After I got home I made lunch (grilled cheese sandwiches using that cheese we'd brought home). Then we turned on the TV and pretended to watch HGTV while we napped.

I made hamburgers and fried potatoes for supper, and I also made a batch of stovetop peaches and dumplings. This is a favorite dish for the DH and I, one that my late mother-in-law taught me how to make. She didn't have a written recipe, and I've never used one, but I decided to write out what I did this time, in order to have the recipe to share.

Well, my internet is not entirely cured, but it's much better today. The Cable Guy did some kind of speed test on my connection, and so it's working faster, and I'm able to navigate better. But he said it may still go out in the evenings when the temps drop (along with our upper TV channels and our phone) until they can get an outside crew to our neighborhood to do something to the box, which is apparently getting too MUCH signal for some reason, messing everyone up around here.

I'm off work today and tomorrow, but the DH is working, won't be home till after 1AM. The house is very quiet with him gone, except for the furnace popping and snapping. I've done some writing and knitting today, and uploaded some new fanfic onto my Nook.

The other day, I heard an interview on public radio with the editor of the new Essential New York Times Cookbook and she was talking about it covering 150 years of recipes. I found it at the library shortly afterwards, and have been enjoying reading it. I tried my first recipe out of it...Read more... )

This stuff was delicious, especially with those biscuits! I'm going to see if I can find the walnut oil in the supermarket here, so I can see how much difference that makes. There are a few other recipes I want to try as well-- especially a couple more soup ones. But I have not even gotten a quarter of the way through this book--it's the size of a dictionary! So I'm sure I will need to re-check!

I'm going to reheat some leftover baked chicken and half a leftover baked potato with a salad for my supper tonight.

So, anyway, that's what's up!
