The pickles on the left are kosher dills; you can't tell, but there are two rows of pickles there--eight jars of sliced and three of whole. On the right are my lime pickles. (They don't have the fruit lime in them. The cukes are soaked in white lime powder before being rinsed and then soaked in ice water. They are a very crunchy and delicious sweet pickle.)

Well, they aren't "Kosher" in the sense of being prepared under rabbinical supervision, but they are "kosher" with a little -k, because they are made with garlic as well as dill, while regular dills don't have garlic in them. I am not absolutely certain how come they are called kosher. Perhaps originally they all were actually Kosher with a big -K.
That's why I did clarify-- it's what most folks think. I first made them several years ago. They are sort of time-intensive. You put a cup of pickling lime (and yes, you just buy like that, among all the other canning and pickling supplies) into a couple of gallons of water and soak the sliced cukes overnight. The next day, they are rinsed thoroughly, and soaked another three or four hours in ice water. Then you mix up a pickling syrup of equal parts vinegar and sugar along with your spices, boil it, drain the cukes and soak them in *that* for another five or six hours. Finally, you cook them in the syrup for about a half hour before canning and processing them.
