Memorial Day

I worked a full shift today; we had leftovers for supper, and I've spent the evening making MEFA nominations! I am so glad the MEFA season has started!

And I always get excited about the MEFAs. I was ready with my list when it started, because last year about half the stories on my list had been nominated by someone else before I got to them!

Um... that banana pudding looks interesting. I am curious about what's on top though. Is it a sauce of some kind or is it baked so it's a hard lid?

Date: 2011-06-01 04:20 pm (UTC)The topping is meringue. Classic banana pudding starts with a cooked custard made on the stovetop, with sugar, milk, egg yolks, flour, and vanilla. Then the custard is layered in the bowl with vanilla wafers and sliced bananas. Finally you whip up a meringue, using the egg whites that were left, and a couple of tablespoons of sugar. Pop in the oven just long enough for the meringue to turn golden-- usually about 6 to 10 minutes. The meringue should hold its shape, but still be sort of soft.
Some people don't do the meringue and substitute whipped cream instead, but for me it's not REAL banana pudding without the meringue. And I like to eat it warm-- it's good cold, but it is heavenly when it is still warm from the oven.
